In such a busy and stressful world, sometimes it's easy to lose sight of the positives. Friday Favourites will be a place for me to share any random and unrelated things I have been loving this week.
For the most part, packaged foods in supermarkets are ones which you should avoid.
But sometimes when browsing the aisle you stumble upon products which you would never have thought to see on Australian shelves.
And which products may these be? Coconut sugar and coconut flour.
It's great to see one of the two biggest supermarket chains in Australia branching out and stocking what some may consider unusual products. However, it is Woolworths that have taken the coconut craze to the next level, stocking both coconut flour and coconut sugar.
I like that now I can go to my local supermarket for coconut flour and coconut sugar. Now there's no wait for the international mail to arrive and no shipping charges to pay.
There's just 2g of fat in a serving size (2 Tablespoons - 14g) which still means it's something that can be enjoyed on a low-fat diet. Unlike most flours, coconut flour actually smells and tastes great uncooked which is why I often use it in place of desiccated coconut. A little goes a long way, with just a slight dusting packing enough coconut flavour to greatly enhance any dish.
Roll date balls in coconut flour for a lower fat alternative to desiccated coconut.
A couple of tablespoons gives added flavour and fibre to baked goods.
It is perfect as a gluten free thickener in gravies and sauces.
Coconut sugar reminds me golden syrup with its rich flavour. It can be used in place of regular sugar or granular stevia in all sorts of recipes.
Coconut sugar gives a caramel-esque flavour to a plain banana smoothie/ice cream.
