Smoothie Saturday #2

This week's Smoothie Saturday recipe is a little twist on caramel milkshakes I used to have as a child.
It's also a spin on datorade, but using coconut milk rather than water.

This caramel coconut smoothie gets super frothy the longer you pulse it in your blender - just like a real milkshake.
If you're a little hesitant in trying datorade, give this recipe a try. 

While this is higher fat than I would usually consume, staying sane on a high carb, low fat vegan lifestyle
means indulging every once in a while. Plus, this is far too delicious to ever resist. 


130g Fresh Medjool Dates
1 Cup Homemade Coconut Milk (recipe coming soon)
3 Cups Water
2-3 tsp Coconut Sugar


Pit all your dates and add to a blender with the coconut milk and sugar
(I find just adding a small amount of liquid to the date helps the blender break up the dates more efficiently)
Pulse to break up the dates, then pour in the water
Keep pulsing to get the coconut caramel smoothie as frothy as you like
