Tapioca is something I've only just been brave enough to try. I'm not even sure why I was so wary of it to begin with. What's to fear about little transparent balls of tapioca?
Tapioca has no taste, but takes on the flavours of whatever you pair it with.
This recipe is about as versatile as it gets. Maybe you don't have enough ripe fruit in your house, but need something high carb to see you through until your next meal. This Bubble Juice will leave you feeling just as satisfied.
You can add the cooked tapioca to any liquids you prefer, transforming it into a higher calorie, more carb-dense drink.
It's something a little fun and quirky.
1/3 Cup (50g) Tapioca Seed
1L of Juice (I chose apple)
Bring a large pot of water to boil before adding the tapioca
Reduce the heat to a simmer and stir the tapioca well
Stirring the tapioca occasionally, keep it simmering for 10-15 minutes, or until the tapioca becomes transparent
Drain the tapioca and rinse with cold water
Add the tapioca to your fruit juice of choice, and enjoy
Makes 1 serve
